Their newest Heirloom offering comes from COMSA in Central Honduras. Founded in 2001 with 69 members, it has grown into a cooperative of over 1200 producers and a leading voice in organic coffee across Central America. The cooperative supports its communities through training in organic farming, access to organic inputs, and meaningful social initiatives.
This coffee is naturally processed, with the whole cherry dried intact before the fruit is removed prior to shipment. During drying, natural fermentation within the fruit develops the distinctive fruity character that defines this coffee.
